Overview
Bait cubes are one of the unique snacks in Yunnan. The raw material for making bait cubes is rice, but you need to choose rice with good quality, fragrance and stickiness. In the old days, pounding bait blocks was a sight. Before the Spring Festival, the soaked rice is first steamed in a wooden steamer. When it is six or seven years old, it is taken out and then it can be pounded in a pot. After the cooked rice is pounded into a dough, it can be taken out and kneaded on a chopping board, then made into a brick shape. This is the bait block. It can also be pressed into a cake shape using wooden molds. There are patterns on the wooden molds such as the characters for happiness, longevity, blessing, fish, magpies, etc. The pressed bait cakes can also come in various patterns. In fact, bait cubes are somewhat similar to northern rice cakes, except that bait cubes are made of ordinary rice, while rice cakes are made of glutinous rice. Bait blocks can be made into various shapes. Except for filament, which is called bait silk, the other shapes, whether cake-shaped, roll-shaped or block-shaped, are called bait blocks. Kunming's famous barbecued bait cubes are made by grilling pancake-shaped bait cubes on a smokeless charcoal fire until they are slightly brown, and then coating the surface with sesame sauce, hot sauce, chili oil, pickled tofu, etc. You can also add cold slices of beef or mutton or fried dough sticks to make it delicious.
