  1. Wash the duck head and soak it in water to remove the blood stains. You can also scald it with water

  2. Prepare materials

  3. First, stir-fry the chili, garlic, Sichuan peppercorns, bay leaves and star anise until fragrant

  4. Pour in the duck head and fry for a few minutes. When the duck head is fully coated with oil, add an appropriate amount of cooking wine, water and brine. Bring to a boil over medium heat, then turn to low heat and simmer until the water dries up

  5. Add other ingredients and mix well
