Mango mousse cake
Overview
Since I fell in love with baking, when I meet family or friends for their birthdays, whenever I have time, I try to make a cake for them, because I feel that a cake made with my own hands is not only a birthday blessing, but also includes my full heart for them. Every time I see my family or friends happy when they see the cake, I feel extremely happy. Spring is the season when mangoes are on the market in large quantities. I mixed mango with yogurt and made a mango mousse cake. It is sour and sweet and very appetizing!

Take a mango, wash it, peel it and cut it into cubes, then put it into a food processor

Then use a food processor to make a puree (take out a large spoonful of mango puree and reserve it for the mirror)

Stir 50 grams of yogurt and 40 grams of sugar evenly

Soak 2.5 pieces of fish gelatin in cold water until soft. Remove and drain the water and place in a mixture of yogurt and sugar. Melt in hot water. Stir while heating until the gelatin sheets are completely dissolved.

Then pour in the mango puree, stir evenly, let cool and set aside

Beat the light cream until it is fluid and has a few fine lines

Then pour in the mango puree and stir evenly to form a mousse filling

Trim off the edges of the cut cake pieces until they are one circle smaller than the cake mold. Take one piece of cake and put it into the removable bottom mold

Pour in the remaining mousse filling, leaving 2 mm of space at the end for the mirror surface. Then put it in the refrigerator for 2 hours.

Soak 0.5 pieces of gelatine in 50 grams of warm water until soft, stirring while heating until the gelatine is completely dissolved.

Add a tablespoon of mango puree and bring to lukewarm temperature

After the cake is refrigerated for 2 hours, take it out, use a small spoon to spread the mirror pectin evenly on the cake, and then put it back in the refrigerator for more than 4 hours. After the cake is refrigerated until solid, use a hair dryer to blow it around and easily remove the mold. Finally, just do the surface decoration
