Prepare the right amount of ingredients

Wash and remove the flesh from the bitter melon

Cut into sections first, then shred

Soak in clean water to remove the bitter taste, changing the water twice during this period, about an hour. I don’t like to use light salt water, because then the bitter melon will not be very crisp

Dried sesame seeds, shredded green and red peppers, sliced garlic, mix shredded pork with soy sauce, vinegar, salt, sugar, appropriate amount of starch and garlic slices and marinate for about 2 minutes. Heat oil in a pan, add shredded pork and stir-fry until it changes color slightly. Add a little cold water (to make the meat more tender) and bring to a boil. Add dried sesame seeds and chili peppers and stir-fry evenly. Finally, add shredded bitter gourd, an appropriate amount of salt, stir-fry evenly and remove from the pan. In order to get the crispy feeling of bitter gourd, don’t fry it for too long, just let it absorb the flavor
