Braised eel head is a dish that is most commonly cooked in my family. It is great with rice or porridge!

Remove the gills from the eel head, clean it, and drain

Cut the ginger into shreds, smash the garlic into flat pieces, sauté in hot pan with cold oil until fragrant

Add the fish head and stir-fry

Add cooking wine, light soy sauce, dark soy sauce, salt and MSG, add color and stir-fry

Add just enough water to cover the fish head, bring to a boil over high heat for a while, then turn to medium heat, stirring halfway through. When the water content is almost the same and the fish head becomes sticky, stir carefully to reduce the juice. Take it out of the pot and sprinkle some chopped celery to add flavor
