-
Prepare ingredients.
-
Wash the beef with water and cut it into pieces, wash the potatoes and carrots, peel them and cut them into hob pieces, slice the onions and ginger, and cut the green onions into small pieces.
-
Pour cold water into the pot, add two spoons of cooking wine and pour the beef into it.
-
After the water boils, use a spoon to skim off all the foam on it.
-
Boil over high heat for 10 minutes, take out and wash with water.
-
Wash the beef.
-
Pour oil into the pot, heat the oil to 60% heat, and stir-fry the green onion segments, ginger slices, bay leaves, and star anise until fragrant.
-
Pour in the beef and stir-fry evenly. Add water to boil and pour into another pot.
-
Bring to a boil over high heat, then simmer over medium-low heat for 50 minutes.
-
Pour a little oil into the pan and sauté the onions over low heat until they become translucent (be careful not to burn the onions).
-
Add the potatoes and carrot pieces and stir-fry evenly.
-
Pour in the stewed beef and cook over medium heat for another 20 minutes.
-
After 20 minutes, turn to low heat, crush the curry and pour it into the pot. Gently stir it with a spatula. Don't smash the potatoes. Wait until the soup thickens and you can take it out of the pot. I didn't add salt because the curry is salty.

A very delicious beef and potato curry is ready.
