Overview
The production of Financier cake is very different from ordinary cakes. It not only needs to melt the butter, but also needs to cook the butter until it is light brown, exuding a rich nutty aroma and then filtering it. Financier can create different flavors by adding nuts, chocolate, fruits, etc.

First, grease the inside of the Financier mold with softened butter and refrigerate until later

Mix the flour and almond flour and sift once and set aside

Put butter into a small milk pot, heat over medium heat, stir while heating, and cook until light brown

Immediately remove from the heat and put the pot into cold water to cool down, but not too cold to prevent the butter from re-solidifying. Remove the pot when the butter cools to about 70 degrees

Add fine sugar and honey to the egg whites. When the hot water is heated to about 40 degrees, take it out and stir with your hands until the sugar melts

Pour in the powder, hold the hand in your right hand and mix vertically against the wall of the egg bowl in a clockwise direction for 120 times

Pour in the caramelized butter that is still warm and stir 100 times using the same technique

Put the thin batter into a piping bag and squeeze it into the mold until it is 90% full. Shake it twice on the table to release air bubbles

Put the mold into the Dongling K40C oven that has been preheated to 190 degrees and bake for about 13 minutes. The actual baking temperature depends on the temperament of your own oven. Wait until the surface is browned and the edges are burnt.
