Wash the green cucumber, scrape off half of the skin, and cut off the head and tail (the head and tail are usually a little bitter)

Cut in half

Pat the back of the cucumber lightly with the back of a knife (it can absorb the flavor better), cut it into pieces, and discard the pulp

Cut into sections diagonally, add 5 grams of salt, stir evenly, and marinate for 10 minutes (stir 2-3 times during this period)

Flatten the garlic with the back of a knife, chop the red pepper finely, remove the seeds and shred it

Discard the water from pickling cucumbers

Add chili pepper, light soy sauce, vinegar, sesame oil, sugar, garlic, red pepper shreds
