  1. Preparation: long eggplant

  2. Wash the eggplant and remove the stems, steam it in a steamer for 10 minutes, take it out and set aside, mash the garlic and finely chop the chilli padi

  3. Add oil to the wok, add the steamed eggplant, fry for 2 minutes, flip over and fry for another 2 minutes

  4. Use a spatula to flatten and smash the eggplant

  5. Sprinkle in minced garlic, chili pepper, salt and soy sauce and mix
