Preparation: long eggplant

Wash the eggplant and remove the stems, steam it in a steamer for 10 minutes, take it out and set aside, mash the garlic and finely chop the chilli padi

Add oil to the wok, add the steamed eggplant, fry for 2 minutes, flip over and fry for another 2 minutes

Use a spatula to flatten and smash the eggplant

Sprinkle in minced garlic, chili pepper, salt and soy sauce and mix
