Chop the duck into small pieces, I didn’t take this photo. Flying water. Because duck meat has a smell, I added green onions and ginger slices to the water. Remove the fishy smell

Light the fire and add oil (my special instructions for this, I added a little lard to make it taste better)

When the oil temperature reaches 70% to 80%, add the duck meat that has been soaked in water. Stir-fry for a while and add a little cooking wine.

The stir-fry time depends on personal preference. The longer the stir-fry is, the meat will be drier and more fragrant. Add the ginger, green onions and garlic at a time. Millet pepper (if you like spicy food, you can use more or less)

Stir-fry until fragrant, add spices and Pixian bean paste. stir fry

Add lettuce (this is based on personal preference, you can also add other things if you like). Add beer. (I put one and a half bottles of snowflakes in cans)

Let it simmer for about twenty minutes and let the sauce reduce. Turn off the heat and cook.
