Overview

  1. Prepare the prepared pork filling in advance (see my previous recipe for pan-fried buns for specific instructions)

  2. Pour the flour into the basin.

  5. Add water and stir to form a uniform batter. Set aside.

  6. Peel and wash lotus root.

  7. Cut the lotus root into slices about 0.6 cm thick, and make another incision in the middle of the thick slice, reaching 2/3 of the lotus root slice, but do not cut it.

  8. Take an appropriate amount of meat filling and sandwich it between the lotus root slices.

  9. All the lotus roots stuffed with meat are set aside.

  10. Pour an appropriate amount of salad oil into the pot and heat it until it is 70% to 80% hot. Use chopsticks to pick up a piece of lotus root and put it into the batter and turn it so that the entire lotus root is evenly coated with batter.

  11. Put the battered lotus roots into the oil pan.

  12. Fry the lotus root clips until they are crispy on the outside, golden in color and crispy and tender on the inside. Remove from the pan.

  13. Drain the oil and transfer to plates.
