Preparation: free range eggs, tomato sauce, Thai hot sauce.

Cut some celery and red pepper into pieces.

Heat the oil in a pan and fry the eggs until golden brown on both sides (my pan is small and takes two times to finish frying).

Pan-fried poached eggs, add a little water, mix tomato sauce, sugar, Thai chili sauce, balsamic vinegar, soy sauce, cook for a while.

Let the sauce hang over the poached eggs.

Add minced celery and minced red pepper over high heat to reduce the juice.
