  2. Shred the meat, cut the dry red pepper into sections, slice the ginger, mince the garlic

  3. Heat oil in a pan, add ginger slices and fat meat and fry them dry

  4. Add minced garlic and shredded pork and stir-fry until color changes

  5. Stir in dried red pepper segments to bring out the spiciness

  6. Stir-fry the shredded lotus roots until cooked, add a little salt and chicken essence and stir-fry evenly

  7. Sprinkle with green onions and stir-fry evenly

  8. Take it out of the pan and put it on a plate. It’s spicy, crispy and tender, and goes very well with rice
