Overview

Qielanxi is stir-fried eggplant, pepper, and tomatoes. It is a popular home-cooked dish in the northwest region. It’s great for rice and noodles. If you want to mix noodles, you can fry the tomatoes until they are softer and leave more soup. If it is only served with rice, the time for stir-frying the tomatoes can be shortened appropriately. Recommend the spicy tomato noodles, they are really delicious.

  1. Wash and cut the eggplant into strips, add a little salt and marinate for about 10 minutes, then squeeze out the water.

  2. Cut tomatoes and green peppers into small pieces, and mince onions, ginger, and garlic.
