Weigh the butter, water, salt and sugar and put them into the pot

Heat the butter pan over high heat to melt the butter, heat until the water boils, and melt the salt and sugar

Melt all ingredients over medium heat

When the water is boiling, pour in the flour and stir quickly

Stir until the dough is cooked and fully incorporated with water, then turn off the heat

When the dough is cooled to a warm state, pour in the egg liquid (three eggs are beaten evenly in advance). Add a small amount at first, and slowly add it. Do not pour it all at once

Just wait until the added egg liquid can lift the dough into an inverted triangle shape. Therefore, the egg liquid must be added slowly. It is possible that the egg liquid may not be used up, so adjust it appropriately according to the shape of the dough.

Scoop out the batter with a spoon and place it on a baking sheet lined with tin foil. Pat it as you like

After 20 minutes at 210 degrees and you see that the dough has expanded slightly, turn to 185 degrees and bake for about 40 minutes. Because the puffs I made are large, the baking time is extended. If you scoop the dough into a smaller size, just turn the temperature and bake for about 20 minutes. In short, bake it to the right position, otherwise it will collapse after coming out of the oven
