Overview

Dongyang’s homemade rice noodles were given to me by a friend. I really like them! Because there are no additives, it breaks easily and the noodles always fail to cook. Today I made pancakes with rice noodles. I found the right method and they taste great! One side is crispy rice noodles, and the other side is pancakes with shepherd's purse; one side has sporadic red, and the other side has layers of green. It's delicious, eye-catching, and has a unique flavor!

  1. Prepare rice noodles and take half.

  2. Soak in cold water until soft.

  4. Chop the shepherd’s purse and red pepper into pieces.

  5. Add an egg, appropriate amount of salt and flour to the minced shepherd's purse, add water and stir into a paste; put the minced red pepper and drained rice noodles together.

  6. Fry rice noodles in oil pan.

  9. Add appropriate amount of cooking wine.

  10. Add appropriate amount of cooking wine and very fresh soy sauce.

  11. When the rice noodles are cooked and soft, pour the shepherd's purse paste into the pot and spread evenly.

  12. When one side is solidified, turn it over and fry until both sides are cooked.
