Double-sided pancake
Overview
Dongyang’s homemade rice noodles were given to me by a friend. I really like them! Because there are no additives, it breaks easily and the noodles always fail to cook. Today I made pancakes with rice noodles. I found the right method and they taste great! One side is crispy rice noodles, and the other side is pancakes with shepherd's purse; one side has sporadic red, and the other side has layers of green. It's delicious, eye-catching, and has a unique flavor!

Prepare rice noodles and take half.

Soak in cold water until soft.

Break off and continue soaking.

Chop the shepherd’s purse and red pepper into pieces.

Add an egg, appropriate amount of salt and flour to the minced shepherd's purse, add water and stir into a paste; put the minced red pepper and drained rice noodles together.
