Peanut and pork hamstring soup
Overview
Pork trotters can be said to be the essence of pig trotters. Like beef trotters, they are springy and chewy. They taste very good when braised or cooked in soup. They are also rich in colloids, which are good for replenishing qi, strengthening muscles and bones. Elderly people often say that a pig only has two hamstrings, which is not much in weight and is the most nourishing to the knee joints.
