Wash the eggs, put them in cold water and cook them over high heat.

Take out the eggs and soak them in cold water for 2 minutes. Soaking the eggs in cold water will make them easier to peel. Peel all the eggs clean and put them in the refrigerator for 3 hours. The purpose of refrigerating the eggs is to allow the protein in the eggs to shrink, and then boil them to make the eggs more chewy.

Heat the pot dry, pour in 3 tablespoons of dark soy sauce, and bring to a slow boil over low heat.

Add peppercorns, aniseed, bay leaves and cinnamon to the dark soy sauce and stir-fry until fragrant.

Pour in the refrigerated eggs and flip them to coat all sides with dark soy sauce.
