French fruit tart
Overview
Taking advantage of the peak season of mangoes and strawberries, and the prices are relatively cheap, use them to make fruit desserts, which are both eye-catching and delicious. After the butter has softened at room temperature, sift in the powdered sugar

Stir until the powdered sugar and butter are completely combined

Knead into smooth dough

Divide the dough evenly into two small pieces, wrap in plastic wrap and refrigerate for half an hour until ready to use

Start making the custard sauce filling. Sift cornstarch and flour together, then add sugar and egg yolk and mix well

Heat milk until boiling

Pour one-third of the boiling milk into the stirred egg yolk flour batter and stir evenly

Stir the egg yolk paste and pour it back into the milk pot

Heat again over medium-low heat for 2-3 minutes, stirring constantly while heating to prevent the bottom of the pot from sticking

Slowly getting thicker and thicker

Remove from heat, add butter and mix well

Cover the prepared custard sauce with a layer of plastic wrap and refrigerate until ready to use

First take a portion of the refrigerated dough and roll it into thin and even sheets

Place the rolled tart crust on the mold and use a rolling pin to roll off the excess tart crust

Gently press the edge with your thumb so that there is no air between the tart shell and the mold

Preheat the oven to 165 degrees and bake for about 15 minutes until the surface becomes golden brown. Leave to cool

Take the custard sauce out of the refrigerator and stir until smooth

Put a piping bag into a 1cm round hole nozzle and fill it with custard sauce

Squeeze the custard sauce into the tart shell

Wash the strawberries and use kitchen paper to absorb the water and cut them into slices

Place on the tart shell with stuffing
