Cold Spinach Vermicelli

I love cold dishes the most. You don’t have to worry about it being too hot. Haha~~~ Cold dishes are refreshing and full of flavor. They are sour, spicy and refreshing, which is great for summer. The vermicelli sold in supermarkets are generally soaked in water alone, which is not soft and does not taste good when served cold. It is best to soak it in warm water overnight, then boil it over high heat, and then pour it into cold water. Soft but not rotten, just right.

Among the chili powders bought in the supermarket, I like this kind boiled in red oil.
