Braised pork vermicelli
Overview
Pork is rich in high-quality protein and essential fatty acids, and provides heme (organic iron) and cysteine that promotes iron absorption, which can improve iron deficiency anemia.

Cut the pork belly into pieces, blanch in a pot, remove the blood, wash, drain and set aside

Cut the green onions into sections, slice the ginger, and prepare Sichuan peppercorns, star anise and dried chili peppers for later use

Heat a little oil in a pan, add pork belly and stir-fry until golden brown

Dish out and set aside

In another pot, add rock sugar and stir-fry until melted

Add pork belly and stir-fry

Add cooking wine, onion, ginger, Sichuan pepper, star anise and dried chili and stir-fry until fragrant

Add appropriate amount of water and boil

Transfer to a casserole and simmer over medium-low heat for about 50 minutes

At this point there is not much soup left, add the noodles soaked in advance

Add appropriate amount of salt to taste

Add a little dark soy sauce for coloring and simmer until the vermicelli becomes soft and serve (if you feel the color is dark enough, dark soy sauce can be omitted)
