  1. Cut the pork belly into pieces, blanch in a pot, remove the blood, wash, drain and set aside

  2. Cut the green onions into sections, slice the ginger, and prepare Sichuan peppercorns, star anise and dried chili peppers for later use

  7. Add cooking wine, onion, ginger, Sichuan pepper, star anise and dried chili and stir-fry until fragrant

  8. Add appropriate amount of water and boil

  9. Transfer to a casserole and simmer over medium-low heat for about 50 minutes

  10. At this point there is not much soup left, add the noodles soaked in advance

  12. Add a little dark soy sauce for coloring and simmer until the vermicelli becomes soft and serve (if you feel the color is dark enough, dark soy sauce can be omitted)
