Hot and Sour Soba Noodles
Overview

Prepare the buckwheat noodles. The two types I use are: tartary buckwheat noodles and cornmeal

Soak the prepared noodles in water for 30 minutes.

While the noodles are soaking, chop the millet, chili, garlic, and chives

Boil water in a pot

Add the soaked buckwheat noodles to the pot and cook for about 8 minutes (buckwheat noodles are very resistant to cooking)

Rinse the cooked soba noodles in cold water and let cool.

After soaking in cold water, pick the noodles into a bowl

Seasoning: light soy sauce, balsamic vinegar, sesame oil, pepper oil, chives, chili oil, mustard, garlic, add millet chili and carrot shreds, mix well
