  1. Prepare the buckwheat noodles. The two types I use are: tartary buckwheat noodles and cornmeal

  2. Soak the prepared noodles in water for 30 minutes.

  3. While the noodles are soaking, chop the millet, chili, garlic, and chives

  4. Boil water in a pot

  5. Add the soaked buckwheat noodles to the pot and cook for about 8 minutes (buckwheat noodles are very resistant to cooking)

  6. Rinse the cooked soba noodles in cold water and let cool.

  7. After soaking in cold water, pick the noodles into a bowl

  8. Seasoning: light soy sauce, balsamic vinegar, sesame oil, pepper oil, chives, chili oil, mustard, garlic, add millet chili and carrot shreds, mix well
