Mushroom braised tofu
Overview
For this dish, the tofu is slightly fried, which not only removes the beany smell, but also increases the aroma of the tofu. It is not very greasy and is really delicious!

Soak the black fungus in warm water 3 hours in advance, wash and slice.

Slice ginger, cut green onions into sections, and slice mushrooms and carrots.

Cut the tofu into cubes. After the oil is hot in the pan, add the tofu cubes and fry until golden brown on both sides. Dish out and set aside

Leave oil in the pot, sauté the ginger slices and add mushrooms, carrots and black fungus.

Stir-fry for two minutes, add water and simmer until cooked.

Finally, put the tofu cubes, add oyster sauce and salt, boil the water until dry and sprinkle with white pepper and scallions.
