Stewed pork trotters with peanuts
Overview
Lao Geng loves fishing. When he has free time on weekends, he and a few fishing friends will go fishing in remote suburbs. Sometimes some farm aunties will sell them fruits and vegetables grown by farmers. Sometimes he will go to the local market to buy some meat or something. This pig's trotter was brought back from the suburbs. It is a big one. Well, it is really fragrant and has a lot less meaty smell!

Prepare the ingredients.

Clean the chopped pig's trotters, add onions, ginger, and cooking wine and blanch them in water.

Wash the blanched pig's trotters to remove any blood foam and impurities.

Heat oil in a pan and stir-fry chives, ginger and star anise.

Add the seafood sauce and stir-fry over low heat until fragrant.

Add pig trotters.

Add dark soy sauce and cooking wine and stir-fry the pig's trotters until browned.

Add water that covers the pig's trotters, then add peanuts and bring to a boil, then reduce to low heat and simmer until the pig's trotters become crispy.

Finally, add sugar and cook over high heat for about five minutes.
