Wash the ribs and cut off the fat.

Chop into pieces.

Pour the pork ribs into water, wash off any foam and drain the water.

Peel and cut the purple potatoes into cubes and soak them in water.

Slice ginger and peel garlic.

Cut green onions into sections.

Soak sweet potato flour in water until soft.

Heat oil in a pan and fry the sugar. (Dissolve the sugar, stir-fry over low heat until brown and make many small bubbles.)

Add the pork ribs and stir-fry quickly until the pork ribs are coated with sugar color.

Add ginger and garlic and saute until fragrant.

Pour in cooking wine and stir well.

Pour in light soy sauce, dark soy sauce, salt and heat enough to cover the ribs, bring to a boil over high heat, then turn to low heat and simmer for 30 minutes.

Add purple potatoes and sweet potato flour and cook for 15 minutes

Reduce the juice slightly over high heat.

Add green onions.

Mix well and serve.
