Overview
Rice wine boiled chicken is a traditional Hakka dish. It is sweet and refreshing, and can nourish qi and kidneys. Hakka people often serve it as a postpartum confinement meal, and it is also a good supplement in daily life. My friend’s mother gave me a large barrel of home-brewed authentic Hakka red dates, wolfberry, glutinous rice and rice wine. I occasionally buy a chicken and cook it in a pot. The sweet and mellow rice wine permeates the chicken, giving it a fragrant and warm taste.
