Braised saury
Overview
Today’s theme is saury, it’s delicious. Saury, also known as bamboo saury, saury, etc., has a thin and round body shape, a dark blue back, a silvery belly, and a slight yellow tint at the snout and the back of the tail peduncle. Saury is one of the most representative autumn ingredients in Japanese cuisine. The most common way to cook it is to salt-grill the whole fish and eat it with rice, miso soup, and grated radish.
