Tomato Gnocchi
Overview
My mother often made this for us when we were young, but I can’t tell you what it’s called. At that time, I always thought it was delicious, and I ate several large bowls of it every time I ate it. When my baby was about one year old, I often made it for her, and the children also liked it very much.

Steps
-
All ingredients.
-
Blanch the tomatoes in boiling water for a while to facilitate peeling.
-
Peel the tomatoes and cut into small pieces.
-
Add appropriate amount of salt and water to the flour to make a smoother batter.
-
Heat oil in a pan, and lift the pan and turn it so that there is oil around the pan. Add tomatoes and stir-fry.
-
Sauté the tomatoes until soft.
-
Add enough water and use a larger spoon to pour the batter to the sides of the pan.
-
The batter on the sides of the pan will dry after a while, use a spatula to cut into small pieces, and then shovel them into the pan to cook (finish all the batter in the same way).
-
When done, cook for about a minute and season.
