Chop garlic, ginger, onions, carrots, and red peppers separately, and cut eggplant into cubes (forgot to take pictures)

Heat oil in a pan, add the ingredients in step 1 and saute until fragrant

Add eggplant cubes

Stir-fry until cooked

Add salt, pepper and sugar and continue to stir-fry until the eggplant pieces become soft

Coriander cut into sections
-
Sprinkle with coriander and stir evenly
