Overview
Madeleine cake, also called shell cake, is a dessert originating from France. It was originally used for home cooking. The great writer Proust recalled its taste and wrote the long literary masterpiece "In Search of Lost Time", so this cake was also pushed onto the stage of history. Prepare all the ingredients, cut the butter into small pieces and melt it into a liquid with hot water. Set aside.

Mix the eggs and sugar with a hand mixer until evenly mixed.

Add honey and mix well.

Mix the low-gluten flour and baking powder, sift, add to the egg liquid, and use a hand whisk to slowly stir evenly until there is no dry powder.

Add the melted butter liquid and stir evenly.

At this point the basic batter is ready, divide the batter into 3 portions.

Add a little purified water to cocoa powder and matcha powder and mix thoroughly. Pour into the basic batter and stir evenly. Cover the surface of the mixed three-color batter with plastic wrap and place it in the refrigerator for 1 hour.

The surface of the refrigerated batter will solidify. Let it stand at room temperature for a while. When the batter becomes soft and fluid again, put them into piping bags.

Brush the mold with melted butter in advance, sprinkle with a thin layer of high-gluten flour, invert the mold and tap off the excess flour. Squeeze the three colors of batter into the mold respectively, and tap twice to release the air bubbles inside.

Put it into the middle rack of the preheated oven, turn the heat up and down to 175 degrees, and it will take about 15 minutes.
