Red date cheese
Overview
Cheese made from dried fruits is a healthy and delicious snack. But the drier kind is difficult to make at home. So I made a change and used light cream milk to make the drink, added sweet dried dates, and used pure lotus root powder as the coagulant. This delicious and healthy snack that is sweet and smooth, with a blend of milky and fruity flavors was born. It nourishes blood and calcium, is nutritious and delicious, and my children love it. It does not contain any preservatives and additives, so it is safe for children to eat!

Steps
-
Have all ingredients ready. For lotus root starch, you must use sugar-free pure lotus root starch, which is mainly used as a coagulant.
-
Take half of the milk, add lotus root starch and mix well
-
Pour the remaining milk and light cream into the milk pot and bring to a boil. Add the milk powder and stir until melted.
-
Bring to a boil over low heat and pour in the milk mixed with lotus root starch
-
Stir constantly while pouring to prevent the pan from sticking, and cook over low heat until thick and smooth
-
Pour in dried dates
-
Continue to stir evenly, then turn off the heat
-
Pour the cheese paste into the container while it is hot. During the cooling process, not only the cheese will solidify into blocks, but the dried dates will also absorb the moisture inside and become soft and waxy
-
I let it sit for a long time before pouring it out. Actually, one hour is enough, but in order to allow the dried dates to absorb more water, I left it a little longer.
