Honey crispy buns
Overview
When I first saw this bread, I was impressed by its beauty. When this bun became popular in the baking industry, I learned that its original name was Korean grilled steamed bun. Later, everyone started baking it and changed its name to crispy bun. The crispy bottom is because a layer of butter is applied to the baking pan during baking. After baking, the bottom is crispy. However, its appearance is not as ordinary as its name. It has a gorgeous appearance and a soft and delicate heart. I believe that as long as you have seen it, you will be deeply attracted by it.

Put the salt into the bread machine bucket. Then add water, eggs, bread flour, honey, fine sugar, milk powder, and yeast powder.

Set the 2 bread machines to the "dough" function and mix for 20 minutes. Add 25 grams of room temperature softened butter, turn on the "dough kneading" function of the bread machine again, and run it twice for 10 minutes until the dough is smooth and a transparent film can be pulled out.

Take out the dough, knead it into a ball.

Put the rounded dough into the basin.

Place a bowl of hot water at the bottom of the oven and place the basin in to ferment until it doubles in size. Poke a hole with your finger. If it does not shrink back, it proves that fermentation is complete.

Knead the dough again and again to deflate the dough and roll it into a round shape.

Divide into equal portions. Cover with plastic wrap and rest for 10 minutes.

Melt a piece of butter in a baking dish.

Prepare 20 ml of water, mix sesame seeds, sugar and cake flour and set aside.

Take a small piece of loose dough and knead it into a round shape.

Use a rolling pin to roll into an oval shape.

Roll out the bottom edge thinly and roll it up from top to bottom.

Roll into a long roll. Roll them up one by one.

Cut the long roll in half.

Dip the cut ends of each roll with water and sesame seeds and place on the baking sheet.

Place the baking sheet in the oven, add a bowl of hot water to moisturize and ferment, and let it ferment for about 30 minutes.

After fermentation, apply a layer of honey water evenly on the bread base. The ratio of honey to water is 1:1.

Preheat the oven to 180 degrees, place the bread on the middle shelf of the oven, and cook at 180 degrees for 20 minutes.
