Dragon Jam
Overview
Pitaya is my son’s favorite fruit. I went to the supermarket last weekend and bought 2 dragon fruits. Unfortunately, the weather suddenly turned cold and my son had a cold and cough. It was not suitable to eat such juicy and cold fruits. No one ate them for a few days, so I had to make jam. This is my first time using dragon fruit to make jam, and it tastes pretty good!

Prepare 2 dragon fruits

Use a paring knife to lightly score the dragon fruit skin four times and peel off the skin

Cut the dragon fruit flesh into cubes, add sugar, mix well, and marinate for 3 hours

Dragon fruit pulp pickled with sugar will release a lot of juice

Pour the marinated dragon fruit flesh into the pot together with the precipitated juice, then add lemon juice and rock sugar, bring to a boil over medium heat, then turn down the heat and simmer slowly, stirring constantly to prevent the pot from burning.

When the juice reduces to a viscous consistency, put it into a sterilized, water-free and oil-free sealed bottle, cool it and put it in the refrigerator. (The jam has a little sugar color, probably because of the addition of rock sugar)
