Stir-fried Duck with Ginger
Overview
Summer is here, and it’s the season when ginger is on the market in large quantities. Add it to meats such as stir-fried duck with ginger, twice-cooked pork with ginger, stir-fried lean meat with ginger, etc. Its unique taste makes people want to eat it and stimulates appetite. It is an appetizer for summer meals. Today I made stir-fried duck with ginger. (This is a dish often eaten in summer.) It is very good. It is spicy and fragrant. The ginger is crisp and refreshing. The duck meat is fat but not greasy. It is soft and delicious. Paired with a glass of cold beer, it is refreshing! 😁 Effects of duck meat: sweet, salty and mild in nature, nourishing yin and nourishing the stomach, diuresis and reducing swelling. Effects of ginger: appetizer, digestion, weight loss, dispelling cold and sweating

-
Cut the duck meat into small pieces, (I used half of one), wash and drain the water, put it in a pot of boiling water, cook the blood foam, and drain out!
-
Pour an appropriate amount of oil into the pot, add duck meat and stir-fry to dry out the water, add peppercorns, minced ginger and garlic in turn, stir-fry until fragrant,
-
Add Pixian douban and stir-fry until red oil comes out,
-
Add star anise, fennel, cinnamon, bay leaves, and stir-fry until fragrant
-
Add appropriate amount of water to mince the duck meat and cook for about 25 minutes
-
When the water is slightly dry, add finely chopped ginger slices and cook for about 5 minutes until the ginger becomes soft
-
Add green and red pepper, (mine is not too spicy, you can also replace it with millet spicy), a small amount of soy sauce, chicken essence, MSG, stir-fry for 2 minutes until cooked,
