Spread ginger slices on the plate

Wash the fish and put it into a plate. Spread salt and cooking wine evenly on both sides and let it sit for about an hour or two

Prepare accessories

Chop the chili pepper, cut the onion into sections, mince the ginger and garlic

Put oil in the pan, fry the fish until golden brown on both sides, then remove

Add a small amount of oil and fry the ginger and minced garlic until fragrant (you can also use the oil in the original pot to fry, I changed the pot)

Add watercress and stir-fry till red oil comes out

Add the peppers and onions and stir-fry for a while

Add appropriate amount of water

After the water boils, put the fish in and cook for a while (the flavor will be better if you cook it for a while, cook both sides)
