Simple version of green bean braised noodles
Overview
I've always wanted to do it, but because I don't have alkaline noodles at home, I haven't done it yet. Whatever the case, let's try using the noodles at home. Compared with alkaline noodles, it's a little sticky, but it's still acceptable.

Boil the noodles in water and then add cold water, stir in cooking oil and set aside

Slice the green onion, mince the garlic and set aside. Add oil to the pot. When the oil is hot, add the green onion slices and stir-fry until fragrant. Add the green beans and stir-fry

After frying the green beans for a few minutes, add water to cover the green beans. Add soy sauce, cover and simmer until the water boils. Remove from the pot and set aside.

Spread the noodles on the green beans, pour over the soup, cover and simmer for 10 minutes, reduce the sauce over high heat and turn off the heat, then add the minced garlic, stir and serve.
