Pork stewed vermicelli
Overview
Pork stewed vermicelli is a must-have dish at wedding banquets in my hometown. I have been away from my hometown for many years. Whenever there are nieces and nephews waiting to get married, I will be notified. Because of my busy work schedule, I rarely go back to attend their weddings, but I always think of the pork stewed vermicelli dish at the banquet. This is also my favorite dish at wedding banquets, so I will make this dish every time during the holidays. The vermicelli fully absorbs the fresh flavor of pork and the rich aroma of oil, so I like to eat vermicelli even more.

Prepare the ingredients, soak the vermicelli in warm water for 1 hour, and cut the pork into thicker pieces

Pour water into the pot and add pork blanching water

After the water boils, cook for about 3 minutes, remove and rinse in clean water

Heat oil in a pan, add pork and stir-fry until oil comes out

Add ginger slices, scallions and star anise and stir-fry together

Add salt, cooking wine, dark soy sauce, light soy sauce, and secret braised soy sauce and stir well

Add water to cover the pork

Bring to a boil over high heat, then reduce to medium to low heat and simmer for 30 minutes. When only 1/3 of the soup is left, add the vermicelli and simmer together. Cook until the vermicelli is cooked, then remove from the pot and sprinkle with chopped green onion
