Egg Vegetable Cup
Overview
An Italian-style baked egg, a perfect breakfast with low carbon and high protein. It is quick and convenient. It can be made into mini cupcakes and you can pack a few for breakfast! You can even make a few more at a time and freeze them in the refrigerator. When you want to eat, take a few out and heat them in the microwave for a few minutes or bake them in the oven for a few minutes. Is there anything more convenient than this? — 4 steps, can be done the night before. The next morning, beat in the egg mixture and bake directly. You can brush your teeth, wash your face and clean up. 20 minutes later, DUANG! ! Take it out of the oven and enjoy! It doesn’t take up any time in the morning. The amount given in the recipe below is for 6 molds. Tulip paper cups are DIY.

Steps
-
There are ready-made paper cups to put into the muffin mold. Like me, if you don’t have tulip paper cups, you can DIY them yourself. Determine the size of the bottom of the six-piece mold. Cut a square with the bottom area as the center. The distance between the bottom of the circle and the side of the square is the height of the paper cup. Cut the middle of each side at a 45-degree angle, as shown in the picture, until the bottom is rounded.
-
Press the cut oil paper into the mold with the pointed part inside.
-
Dice green peppers, onions, and bacon.
-
Turn on medium heat, put oil in the pot, stir-fry the diced green peppers, onions and bacon until they are half-cooked. Add a little salt and black pepper to taste.
-
Spoon the fried filling into the paper cup mold.
-
Add cheese.
-
and diced tomatoes. If you want to add green leafy vegetables, add them in this step!
-
Beat 5 eggs in a bowl with a whisk and add a pinch of salt to taste. Pour slowly into the paper cup until the filling is submerged. PS If you don’t want to add so many eggs, you can skip a few eggs.
-
Add some milk and mix well
-
Place in the preheated oven at 190 degrees in the middle rack for about 20 minutes. Wait until the egg liquid is solidified and it’s ready to be taken out of the oven!

Everyone's oven temperature is different, so the baking time can be adjusted accordingly.
