Overview
Fried dough sticks and pancakes are a must-have item for breakfast. Many people think that soy milk and fried dough sticks are the best partner, but I prefer deep-fried tofu cakes and never tire of eating them. You must eat pancakes every Thursday morning in the workplace canteen, and you can’t buy them if you get there late. Some colleagues said that eating too much fried food was unhealthy, but they bought three fried cakes at once. People who have been clamoring to lose weight, when they see fried pancakes, they immediately think that just eating one meal will not have much impact. It can be seen that everyone loves pancakes and cannot resist the temptation. If you have time, fry pancakes at home, it’s not a hassle at all. I usually make the noodles on Friday night and put them in the refrigerator, then take them out and fry them on Saturday morning. They are very fluffy, crispy on the outside and soft on the inside. I serve them with salads or pickles, and a bowl of porridge.

Add baking powder, salt and eggs to flour

Use warm water (around 30 degrees Celsius, preferably not too hot) to dissolve the yeast and knead the dough. If not, use warm water. The dough must be kneaded very soft, so that it becomes a dough but is still slightly sticky. (If your hands are sticky at the end of kneading, you can apply some oil on your hands.) Let it rest for about 2 hours. I usually make the noodles at night and refrigerate them before frying them the next morning.

Take out the relaxed dough and apply some oil or sprinkle some flour on the cutting board to prevent it from sticking. Press with your hands into a long strip.

Shape into small dough of about 50 grams with your hands.

After rolling it into a piece, use a knife to score two slits in the middle. Be sure to grease the chopping board in this step. If it is difficult to roll it out, you can also dip your hands in oil and flatten it directly.

Put appropriate amount of cooking oil in the pot. The oil temperature is 70% hot, and the chopsticks stand in the oil with small bubbles around them. Add oil cake.

Fry over medium heat until golden brown on both sides. The fire must not be too high, otherwise it will be cooked on the outside but still raw on the inside.
