Steps
-
To prepare the filling, chop half of the shrimp into puree and cut the other half into small cubes;
-
First mix the pork filling, shrimp paste, ginger, cooking wine, salt, white pepper, and sugar, and stir in one direction;
-
Add diced carrots and chopped green onions, stir again;
-
Stir in one direction until smooth, cover with plastic wrap and refrigerate until ready.
-
How to make shrimp dumpling wrappers: First mix 100 grams of corn starch, 10 grams of corn starch, and salt, stir well, add 150 grams of boiling water, and set aside the other 20 grams of corn starch for later use;
-
While washing, use chopsticks to stir into snowflakes;
-
During the mixing process, try not to have dry noodles;
-
Then cover and simmer for 5 minutes
-
Knead the hot noodles evenly and add the remaining 20 grams of cornstarch in batches;
-
Add 5 grams of oil and knead until the dough is smooth.
-
Cover with a damp cloth and let rise for 20 minutes. Roll the dough into a long strip and cut into small pieces
-
Roll it into a thin sheet and use a mold to print it into a round shape (it’s too slow to use the mold. Later, I rolled it out by hand and it was not very round, but I have to practice more to make progress);
-
Wrap in fillings;
-
Arrange the wrapped shrimp dumplings on the carrot slices one by one, bring the water to a boil, turn on medium heat, and steam for about 5 minutes.
