Cucumber and sesame sauce cold noodles
Overview
I learned this from a good friend in the north. When I heard her talk about cucumber cold noodles for the first time, I was surprised that something so tasteless could be delicious. It turns out that it is really delicious. She said that when her family eats it, they boil some oil from dried Chinese toon heads and pour it over it. I don’t have Chinese toon heads today, so I can only use the scallion oil saved from making scallion oil cold noodles a few days ago haha~

One cucumber, cut into strips (I made it for about three people, you can increase or decrease as appropriate)

Pickle the cucumbers with salt. The amount of salt should be slightly more, because the cucumber shreds in this noodle will act as a side dish, and the taste will be bland and tasteless.

Crush it evenly with your hands and set it aside for later use

About two and a half tablespoons of sesame paste is enough for three people ~ add water to drain. I like to add a tablespoon of sesame oil when making the first pass, so that the sesame sauce will have a more oily texture.

Don't let the sesame paste drain out completely. After the cucumber juice is released, add cucumber juice instead of water to continue to release the sesame sauce. It will have more flavor~~ The dilution degree of the sesame sauce is about the same as when eating hot pot. If you want it to be refreshing, you can make it thinner. It depends on your personal taste.

Then cook the noodles. After the noodles are cooked, run them through cold water and make sure they cool down completely. Spread the noodles at the bottom, put shredded cucumber on top, and I also put some pickled bell peppers (there is a tutorial earlier). You can also put some minced garlic in it.

Finally, pour the prepared sesame sauce and it's ready to eat. A very simple but extremely delicious quick dish.
