【Finger Biscuits】---A must for tiramisu
Overview
Finger biscuits are an essential ingredient for tiramisu cake. Its taste cannot be replaced by ready-made finger biscuits on the market. It can be baked into the shape of sticks, or it can be baked into round cake shape according to the size of the mold. Strip-shaped finger biscuits, in addition to being used as an ingredient in tiramisu, can also be used directly to make teething biscuits for babies.

Separate the egg yolks and egg whites, add 15 grams of fine sugar to the egg yolks, and beat by hand until the egg yolks become larger in size, lighter in color, and the sugar melts.

Put the egg whites into a clean container that is oil-free and water-free, add a few drops of white vinegar, add fine sugar in three batches, and beat until it is close to dry foam.

Take one-third of the meringue and add it to the egg yolk batter.

Gently stir evenly (be careful not to defoam).

Pour back the remaining two-thirds of the meringue.

Sift in the low flour, cut in irregular directions and mix evenly. The mixed batter is light, fluffy and grain-free.

Put the egg batter into a piping bag, then pipe it into a shape on a baking sheet lined with greaseproof paper, leaving a slight gap in the middle, and sprinkle a thin layer of powdered sugar on the surface.

Place in the preheated oven, 170 degrees, middle rack, upper and lower heat, and bake for 18 to 20 minutes.
