Stir-fried Bitter Melon with Black Bean Sauce
Overview
The bitter melons that my mother planted in the courtyard were picked when they were small. I ate one piece at a time, which was just right. I paired it with black beans and dried red peppers. It was salty and spicy, and it went well with rice. When I got home at noon, I could have this delicious meal in just a few minutes.

Cut the bitter melon into thin slices.

Remove the flesh from the bitter melon and soak it in salt water for five minutes.

Cut dry red pepper into sections, chop black bean and set aside.

Put a little oil in the pot and sauté the red pepper until fragrant.

Add black bean sauce and stir-fry until fragrant.

Add bitter melon and stir-fry.
