Yellow Peach Cheese Pie
Overview
Some time ago, I won a prize on Weibo for a box of 6 canned yellow peaches. My family didn’t like to eat them, so I worked on it slowly until I had only the last one left. People are like this, they cherish things if they are too much and don’t care if they are less, so I suddenly couldn’t bear to part with the last one. I always felt that it would be more cost-effective to do something. I just received the Yangchenhuo bottom pie mold from Youzhibao early on the weekend, and I immediately thought of this yellow peach pie, and there is no reason why it would not be delicious with lemon cheese filling. After eating clay pot rice outside, we got home and started: shaping the pie crust, making the stuffing while it was resting, and cutting the yellow peach slices while baking. The moment the finished product came out, I was so happy that my son clamored to eat it while taking pictures. The neighbor's children happened to come over too. He and his son ate a small one, and I saved the big one for taking pictures before cutting it open and eating it. The crispy butter base, fresh and tender cheese filling, and sweet yellow peach slices on top, the whole thing tastes very rich!

Prepare the required ingredients

First make the pie base (details of main ingredients above): Mix sugar into flour, add butter cut into small pieces

Knead the butter and flour with your hands until it becomes loose and granular, make a well in the middle and pour in the milk (add the right amount of milk)

Mix into a dough, place in a plastic bag and refrigerate for an hour

While the dough is resting, make the filling: Heat the butter, cheese, and sugar over water to melt, stir and mix evenly

Add lemon juice and mix well (it’s best to scrape some lemon zest for a very fragrant aroma)

Add egg liquid and mix well

Add 10G cornstarch and mix well

Set aside the prepared cheese paste

Roll out the risen pie crust into dough and spread it on top of the pie mold

Use a rolling pin to roll the excess dough on it and make two small pie crusts in sequence

Use a fork to poke even holes in the bottom of the pie to prevent it from swelling during baking. Place it on a baking sheet and bake in the oven at 190 degrees for 15 minutes

Take it out and pour in the cheese paste

Continue baking for 15 minutes until the cheese filling is solidified

Cut the yellow peach into even slices
