Fried Luffa with Shrimp
Overview
My mother used to say, why is the fried loofah black? Hehe, have you asked the same question? The key point is: add salt before serving. Of course, some say to soak it in salt water for a while before frying, some say not to add chicken essence, and some say to fry it first! In short, I am just telling you the method that I have tried in practice :)

Peel the loofah and cut into hob pieces;

Heat oil in a pot and sauté garlic and dried shrimps first;

Pour in the loofah and stir-fry for a while; *Luffa is easy to cook, maybe because the firepower at home is not enough, it seems impossible to fry it directly, and no water comes out of it;

Pour in a little hot water;

Cover the pot and cook for about 5 minutes;

Finally, add fine salt and stir-fry for a while!
