Purple Sweet Potato Egg Tart

I bought a few purple sweet potatoes and have two left. I have never made purple sweet potato tarts, so of course I have to try them, they taste really good!

Required ingredients (I put milk, light cream, and sugar together; purple sweet potatoes can be steamed in advance when cooking)

Gently stir the milk, light cream, and sugar mixture for a few times until the sugar dissolves (you don’t need to boil it in summer; if it’s winter or the temperature is low, you need to boil it for a while)

Beat the egg yolks

Pour the egg liquid into the cream mixture and stir evenly

Then sift in the flour and mix well

Filter the egg tart liquid once

Cut purple sweet potato into small pieces

Put the purple sweet potato into the egg tart crust

Slowly add the egg tart liquid until it is 70-80% full

Preheat the oven and bake at 160 degrees for 20 minutes, then turn to low heat for 10 minutes
