Prepare ingredients.

Soak the prunes in advance.

Cut the ginger into large pieces and cut the garlic stems into small pieces.

Clean the pork and cut into large pieces.

Lift the pot.

Put the pork in cold water, add cooking wine and blanch for 2 minutes.

Rinse with cold water to remove any scum.

Take out the soaked prunes and drain the water.

Heat oil in a pan. When the oil is 70% hot, add dried prunes and stir-fry until fragrant. Dish out and set aside.

On low heat, add rock sugar and boil until it turns brown.

Add the meat pieces and stir-fry evenly.

Add the prunes and stir-fry evenly.

Add cinnamon, star anise, bay leaves, ginger and chili and stir-fry evenly, transfer to the electric pressure cooker (no need to add water), add salt and press for 20 minutes. After the time is up, open the lid, add chicken essence and oyster sauce to taste, add garlic stalks, and drain away most of the soup.
