Xinjiang Naren

Xinjiang Naren

Overview

The weather is getting colder and colder. My husband went to the mountains two days ago and brought back half a sheep with some bones. Suddenly I remembered that I haven’t done that for a long time. This season is very suitable. Naren is a very favorite food of the nomads here. The weather in Xinjiang is cold in winter, and mutton is hot. The herdsmen living in the mountains are short of supplies, and there are relatively few vegetables. They need to buy them at the foot of the mountain, and it is not convenient to go out of the mountain. There are many ways to make Naren. I learned this when I was a guest in a herdsman's house when I went to the mountains. The method is relatively simple. The ingredients used are also relatively small. In fact, there are not many seasonings and ingredients in herdsmen’s homes, and all the food is basically authentic.

  3. First chop the mutton bones into two pieces (to make it easier to extract the marrow from the bones) and put them in a pot with water to boil out the blood in the meat. Remove the blood foam (this sheep grew up eating wild grass and drinking spring water, so it is more delicious and has no smell. If the mutton you buy is smelly, you can add some cooking wine)

  9. After the noodles are cooked, take them out and put them in to prepare the dish. Don't overwater the noodles but keep them warm. Because no salt has been added to the stew until now, you can add a little salt according to your own taste at this time and mix well.

  10. Put it on a plate, take out the bones and use a knife to remove the meat, and put it on the surface. You can sprinkle some salt on the meat, or you can mix a small bowl with a bowl of salt water and just dip the meat in the salt water
