Prepare raw materials

First soak the gelatine slices in ice water

Chiffon cake slices

Use a knife to cut off the sides of the cake

Place into a six-inch cake mold

Cut strawberries in half

Arrange the strawberries evenly around the cake mold, with the cut surface attached to the inside of the mold

Melt the gelatine slices in the milk and set aside until cool

Whip the light cream until it has texture, that is, six portions

Prepare the strawberry jam in advance. If you like a delicate texture, you can crush it in a food processor. I prefer a grainy texture without crushing it

Add the strawberry jam to the whipped cream and mix well

Take a small portion of the mousse paste and add it to the gelatine and mix well

Stir evenly and then add into the light cream and stir evenly

Pour the mousse batter into the cake mold, pour it evenly, and finally press it a few times

Add another slice of cake

Pour the remaining mousse batter into the cake mold and use a scraper to smooth the surface. Place it in the refrigerator for more than four hours. It is best to take it out overnight and unmold it

The glossy mousse is made with QQ sugar. Take a pack of QQ sugar and add a little water to melt it and cool it. Then pour it on the surface of the mousse and refrigerate it

You can use a hot towel or a hair dryer to unmold the cake. It is best to refrigerate it overnight before unmoulding.
