Soybean and Peanut Stewed Pork Trotters
Overview
The spring wind in the north is extremely dry and the skin is not in good condition. Drinking pig's trotter soup containing a large amount of colloid is particularly nourishing to the skin. My casserole is relatively large, 4.3L, so I cooked 3 pig trotters. You can increase or decrease the ingredients according to personal circumstances.

Add peanuts and soybeans soaked overnight to the casserole, add water until the casserole is 80% full, bring to a boil over high heat, skim off the foam, and simmer over low heat for one hour

Add red dates, green onions and garlic and simmer over low heat for more than 1 hour. At the same time, remove the scallions that were added before. Add the red dates later to reduce the destruction of the vitamins inside, and add the garlic to prevent it from being added too early and cooked

When the soup turns milky white and can be penetrated by piercing the pig's trotters with chopsticks, remove the scallions and season with salt and pepper 10 minutes before serving!
